English Version
Well I have very little time to return to Spain and before leaving I wanted to prepare this traditional Spanish cake that enchants many for its sweet flavor and fluffy texture.
For me it was the first time I prepared and tasted it, and the truth is that I loved it. The recipe is from the book of Simone Ortega "1080 Recipes" and the bain-marie is done with a pot on the fire but as my mold did not fit in any pot I had prepared the bath in the oven. In the recipe I'll explain it.
Capuchina Cake
Ingredients for the yolk cake: (for about 8 people)
10 egg yolks
1 egg
2 tablespoons cornstarch
a little butter for the mold
Elaboration:
- Spread the mold with enough butter and cool it in the refrigerator.
- Whip the yolks and whites together until tripling its volume and the mixture is very aerial and whitish.
- Add the cornstarch carefully so there are no lumps and careful not to lose the air using a rubber spatula (we can extract a small amount of whipped yolks and mix well with the cornflour to break up any lumps that may arise and then add this mix the rest of the whipped egg yolks).
- Pour the batter into the pan and place the bain-marie with boiling water for 8-10 minutes taking care that the water does not splash into the cake (I had no pot which could fit the mold so I put a tray with water in the oven at 200 degrees and when the water was boiling I put the mold and lowered the oven temperature to 160 degrees with only heat below).
- After this time, remove the mold from the bain-marie and put the cake in the preheated oven at 140 degrees and bake for 20-25 minutes or until it comes out clean when we puncture it (as I had it in the oven, I removed the tray with water and put heat up and down to 140 degrees for 15 minutes).
Ingredients for the syrup:
150g water
150g sugar
peel of one lemon
Elaboration:
- While we have the cake in the oven heat water with sugar and lemon peel and boil for 7 minutes.
- When the cake is out of the oven pierce with a stick several times but without reaching the end.
- Dip the sponge cake with the syrup. Wait 5 minutes. Carefully unmold the cake to not break it.
Ingredients for bathing yolk:
3 egg yolks + 1 tablespoon water
125g sugar
100g water
Elaboration:
- Boil water with sugar for 10 minutes.
- Mix the egg yolks with a tablespoon of water. Add the syrup slowly over the yolks.
- Heat over low heat, stirring with a whisk to prevent sticking, boil for 3 minutes. Allow to temper a bit before using but not too much to make it smoother.
- Extend yolk cream over the cake completely covering it.
- Finally we extend a layer of icing sugar over using a strainer or sieve and a rod preheated fire we mark the drawing of the diamonds above (I used a rod which is typically used for kebabs metal the fires warmed in the kitchen). We can also decorate with egg whites with sugar (I like more and nothing more because it's a pretty sweet cake).
