Individual Cereza, Pistacho, Yogur

• Ponemos todos los ingredientes menos el huevo en el cuenco de la amasadora con la pala y mezclamos hasta tener como una textura de arena (la mantequilla debe estar muy fría).
• Añadimos el huevo y mezclamos hasta que se integre, sacamos la masa del bol y la terminamos de amasar a mano comprobando de que no quedan grumos en la masa.
• La colocamos entre papel film y la extendemos todo lo que podamos lo que nos facilitará el enfriado y luego el extendido. Enfriamos en la nevera durante 15-20 minutos.
• Sacamos la masa de la nevera, recortamos los laterales ya que hay masa de sobra y nos será más fácil extender, extendemos la masa de unos 2-3 mm de grosor. Cortamos un círculo del tamaño interior de nuestro aro 8mm y una tira un poco más gruesa de la altura de la tartaleta.
• Enfriamos la masa otros 15 minutos para que nos sea fácil trabajar con ella. Colocamos sobre una bandeja con papel de horno o silpat el aro de 8 cm de diámetro, ponemos la tira sobre las paredes y el círculo de masa y le damos forma con cuidado, incidiendo en las paredes para que no queden burbujas (es interesante ponerse harina en los dedos para que no se nos pegue la masa ni la deformemos). Recortamos el exceso de masa. Pinchamos la base con un tenedor y enfriar en nevera durante 20 minutos para que no encoja la masa en el horno.
• Precalentamos el horno a 180º y colocamos papel film resistente al horno con pliegues por si encoje y rellenamos con arroz para que la tartaleta se cueza lisa y sin burbujas). Horneamos durante 15 minutos o hasta que los bordes de la masa comiencen a dorarse. Sacamos el arroz y volvemos a meter en el horno durante otros 5 minutos (horneado en blanco). Colocamos la crema de pistacho y horneamos 10 minutos más.

Crema de almendra y pistacho

• Pomar la mantequilla con el azúcar con el escudo de la amasadora. Vamos alternando los sólidos con los huevos. Por último añadimos la pasta de pistacho a mano con la lengua.
• Ponemos la crema en una manga con una boquilla 10.

• Juntamos los purés, el zumo de limón, el azúcar y la glucosa en un cazo y calentamos hasta que esté caliente. Añadir la pectina mezclada con el azúcar en forma de lluvia removiendo. Hervir un minuto.
• Añadir el ácido cítrico y enfriar tapado a piel. Una vez frío rellenar  la tarta con el coulis hasta arriba.

• Mezclamos la masa con pasta de pistacho y harina vamos añadiendo poco a poco para tener una buena textura.
• Congelamos la masa en forma de rulo. Rallamos la masa y horneamos a 170º durante 15 minutos. Enfriar y triturar.
• Usar para decorar el lateral del semifrío y el plato.

• Hidratar gelatina en agua fría. Calentar el azúcar con el agua hasta 125º. Ir batiendo las yemas y añadir el almíbar cuando tenga la temperatura correcta y montar la mezcla. Añadir la gelatina cuando las yemas y el almíbar estén mezclados pero antes de que se enfríe.
• Añadir a la mezcla el yogur con movimientos envolventes y el aroma (pulsar dos o tres veces).
• Montar la nata a picos suaves, añadir a la mezcla anterior con movimientos envolventes. Repartir entre los moldes y congelar (45g en cada uno).
• Desmoldar, preparar el brillo y pasar una capa por arriba. Colocar sobre la tartaleta y decorar con cereza, teja de chocolate y gotas de coulis.
• Decorar los laterales con el crujiente y cerezas.

• Necesitaremos fruta fresca (fresas, moras, arándanos, cerezas), chocolate negro, sobras del crujiente, del cloulis y brillo frío.
• Atemperaremos chocolate, cortaremos círculos en papel de guitarra y lo enroscaremos sobre un rodillo para que coja la forma de teja.
• La tartaleta debe estar formada por la base de sablé rellena con la crema de pistacho y almendra y finalizada con el coulis de cereza. Sobre la tartaleta colocaremos el semifrío de yogur que pintaremos con brillo frío y sobre la que colocaremos una teja de chocolate y una cereza encima. Alrededor del semifrío colocaremos crujiente de pistacho  y trocitos de cereza cortados en gajitos.
• Colocamos la tartaleta en el centro del plato y alrededor esparcimos un aro de crujiente, colocaremos unas gotas de coulis y las frutas repartidas alrededor.

Tartlet dough

• We put all the ingredients except the egg in the bowl of the mixer with the shovel and mix until it has a sand texture (the butter must be very cold).
• Add the egg and mix until it integrates, remove the dough from the bowl and finish kneading it by hand, checking that there are no lumps in the dough.
• We place it between plastic wrap and extend it as much as we can, which will make it easier for us to cool and then spread. Chill in the fridge for 15-20 minutes.
• We take the dough out of the fridge, we cut the sides as there is leftover dough and it will be easier for us to spread, we extend the dough about 2-3 mm thick. We cut a circle the inside size of our 8mm ring and a slightly thicker strip the height of the tartlet.
• Chill the dough for another 15 minutes so that it is easy to work with. We place the 8 cm diameter ring on a tray with baking paper or silpat, we put the strip on the walls and the circle of dough and we shape it carefully, affecting the walls so that there are no bubbles (it is interesting to put flour on the fingers so that the dough does not stick or deform us). We trim the excess mass. Prick the base with a fork and chill in the fridge for 20 minutes so that the dough does not shrink in the oven.
• We preheat the oven to 180º and place oven-resistant plastic wrap with folds in case it shrinks and fill with rice so that the tart is cooked smooth and without bubbles). Bake for 15 minutes or until the edges of the dough begin to brown. Take out the rice and put it back in the oven for another 5 minutes (baked in white). We place the pistachio cream and bake 10 minutes more.

• Blend the butter with the sugar with the shield of the mixer. We are alternating the solids with the eggs. Finally we add the pistachio paste by hand with the tongue.
• We put the cream in a sleeve with a nozzle 10.

• We combine the purees, lemon juice, sugar and glucose in a saucepan and heat until hot. Add the pectin mixed with the sugar in the form of rain, stirring. Boil for a minute.
• Add the citric acid and cool covered to skin. Once cold, fill the cake with the coulis until it reaches the top.

• We mix the dough with pistachio paste and flour, adding little by little to have a good texture.
• Freeze the dough in a roll. Grate the dough and bake at 170º for 15 minutes. Cool and grind.
• Use to decorate the side of the semifreddo and the plate.

• Hydrate gelatin in cold water. Heat the sugar with the water up to 125º. Beat the yolks and add the syrup when it has the correct temperature and assemble the mixture. Add the gelatin when the yolks and the syrup are mixed but before it cools down.
• Add the yogurt to the mixture with enveloping movements and the aroma (press two or three times).
• Whip the cream into soft peaks, add to the previous mixture with enveloping movements. Distribute between the molds and freeze (45g in each).
• Unmold, prepare the shine and top coat. Place on the tartlet and decorate with cherry, chocolate tile and drops of coulis.
• Decorate the sides with the crisp and cherries.

• We will need fresh fruit (strawberries, blackberries, blueberries, cherries), dark chocolate, crunchy leftovers, cloulis and cold shine.
• We will temper chocolate, cut circles on guitar paper and screw it on a roller so that it takes the tile shape.
• The tartlet should be formed by the base of sablé filled with pistachio and almond cream and finished with the cherry coulis. On the tartlet we will place the semi-cold yogurt that we will paint with cold shine and on which we will place a chocolate tile and a cherry on top. Around the semifreddo we will place crunchy pistachios and cherry pieces cut into small wedges.
• We place the tartlet in the center of the plate and around it we spread a crunchy ring, we will place a few drops of coulis and the fruits spread around it.
