Hornear a 170ºC º5 minutos.

Praliné de nuez:

100g nueces

50g azúcar de coco

10g agua

A few weeks ago, Nueces California sent us their fantastic walnuts which are a source of Omega 3 fatty acids and they challenged us to publish a recipe with walnuts presented in 3 preparations.

As a good pastry chef I had to prepare some sweets with them and I prepared these fantastic chocolate tartlets with walnuts that I hope you will love, since it is also good to treat ourselves from time to time.

Chocolate and Walnut Tartlets (California Walnut Challenge # ElPoderdel3)

Tartlet base:

90g butter

10g coconut sugar / panela

1 egg

70g rice flour

30g cornstarch

60g crushed walnuts (powder)

4g salt

Mix the butter with the sugar. Add the egg and finally the dry ones. When we have a homogeneous mass, we stretch between two sheets of paper to a thickness of about 3 mm. Chill in the fridge for 1 hour. We peel off the paper from both sides and cut out a circle the size of the hoop and a strip the height of the hoop that we will place inside the hoop on the dough circle. We puncture the base. Bake at 170ºC º5 minutes.

Walnut praline:

100g walnuts

50g coconut sugar

10g water

40g milk chocolate

In a saucepan we heat the sugar with the water. We put the walnuts in the oven at 100ºC to keep them warm without burning. When the sugar caramelizes we add the hot walnuts so that the sugar does not crystallize before its time. Mix well and spread on a tray with greaseproof paper. We grind with a processor until we have a paste. Mix with the milk chocolate. Fill the tartlets halfway and cool to solidify and put the creamy on top.

For the creamy chocolate fleur de sel:

200 gr of 70% dark chocolate

220 g of cream

4 gr of salt flower

Melt the chocolate and heat the cream to 40ºC. Add the cream to the chocolate little by little, mixing carefully and finishing with the salt and emulsifying with a blender. We fill the tartlet to the edge. We let cool in the fridge.

We decorate with nuts or decorative chocolates.

Saint Honoré Tart

Caramelo 10:00

English version

Well it's been a while but I had operated the wrist again so I had to leave baking for a few weeks, but I'm back gradually and today I have the cake that I prepared for my cousin Julia (called like me ) for her birthday.

My cousin who is French, and I had not seen her for more than 6 years ago, coincided to be living in London, as me, just two blocks from where I live, a great (and charming) coincidence. For the first time we met we went to lunch at a French bakery called La Patisserie des Reves, where we tried different cakes, including Saint Honore and she told me that it was her favorite cake.

Classic Saint Honore cake is made by a thin base puff to which extends a layer of cream Chiboust surrounded by choux filled with the same cream filling and caramel. Inside it is decorated with whipped cream shaped blades made through the nozzle Saint Honoré, round with an opening on one side that allows that shape. I leave here a little history:

Saint Honoré Tart

Ingredients for shortbread dough:
1 egg M
240g flour with a pinch of salt
80g icing sugar
30g almond powder
Very cold butter 150g

Elaboration:

Put all ingredients except the egg into the bowl of the mixer with the paddle and mix until they have a sandy texture (butter should be very cold).
Add the egg and mix until blended, get the dough from bowl and knead by hand checking that there are no lumps in the batter.
Film the dough and prepare two oven paper sheets so we can extend easily. Chill it in the refrigerator for 15-20 minutes.
Take the dough from the refrigerator, cut the sides as there are plenty of it and it will be easier to extend, Extend the dough of about 2-3 mm thick. Cut a piece greater than our mould square.
Cool the dough another 15 minutes to make it easy for us to work with. Put the square mould on a tray with baking paper or silpat , put the extended dough and give it the shape of the mould carefully, focusing on the walls so that there are no bubbles (it's interesting to put flour on your fingers so they don't deface or get stuck to the dough). Cut the excess dough. Prick the base with a fork and chill in the refrigerator for 20 minutes to not to shrink the dough in the oven.
Preheat oven to 180 degrees and place paper resistant baked film inside the mold and fill it with rice to bake the tart smooth and with no bubbles). Bake for 15 minutes or until edges begin to be brown. Take the rice and return to put it in the oven for another 15 minutes (baked in white).

Ingredients for craqueline (crispy on the choux) Optional:
35g butter
45g brown sugar
45g flour

Elaboration:

Mix the three ingredients together until you have a smooth dough.
Roll it out thinly with a rolling pin between two sheets of baking paper. Freeze.
With a small cutter cut circles that will be placed on the choux before baking.

Ingredients for the choux:
125g water
50g butter
2g salt
3g sugar
75g flour
2-3 eggs (depending on how much you dry the dough and the humidity it will admit more or less egg so we have to be sure that we have the right texture)

Elaboration:

In a saucepan heat the water with butter, salt and sugar. When it starts to boil add the flour and mix well so that we have a united and smooth, dough that don't crumble.
Put the dough to a bowl and begin to beat (better with the attachment of the blade if we have a kitchenaid or similar), a few minutes later, that it has lost the heat, add the eggs little by little just until we get a texture that falls as a tape shape.
Put the dough in a pastry bag with a plain nozzle. Prepare a Silpat, parchment paper or nonstick pan and make high points with the dough with enough distance between them as they grow quite a lot. Place a small circle of craqueline smaller than our choux on their top.
Heat the oven to 200 ° C, when the oven has reached this temperature put the pan in the oven and turn it off, check the temperature inside (best without opening the door with an oven thermometer) and when it reaches 170 ° turn on the oven at 170 degrees and bake for 25-30 minutes (depending on size). To verify that it is properly baked we can open one of them and see them without raw eggs into dough. Wait for it to cool before filling.

Ingredients for crispy caramel filling:
125g sugar
15g butter
100g cream
a pinch of Maldon salt
biscuits crumble

Elaboration:

Put sugar in a saucepan and caramelize. Heat the cream in the microwave
Add the cream in several times and mix well. Heat for 4 minutes
Put the sauce to another bowl and wait until is not too hot (about 35 degrees) and add the butter and mix well. By last add the crumbled biscuits (about two for a cake as I did).
Fill the tart with our crunchy caramel and chilled in the refrigerator.

Ingredients for Chiboust cream:
250 g milk
45 g yolks (about 3)
50g sugar
25g cornflour
2 sheets of gelatin (4 g)
Italian meringue (60g egg whites, 120g sugar, 40g water)

Elaboration:

Heat the milk in a saucepan. In a bowl mix the yolks with the sugar and cornstarch. Hydrate the gelatin in cold water.
Before the milk begins to boil take away from the fire and add to the yolks mixing well in 3 times. We put all at the heat again and heat stirring continuously to prevent sticking, until it thickens, then take it away from heat, stir well with a whisk to smooth the mixture and return it to heat for 12 seconds to remove the taste of cornstarch.
Drain the gelatin and add to the hot cream, stir to completely mix..
Meringue: warm in a saucepan the sugar and water to 120 ° C. When it reaches about 114°C, begin to whip the egg whites. Add the syrup when it reaches 120 degrees, gradually. Whip to have a firm meringue.
Add the meringue in two or three times on the still warm custard, use directly. Fill up above the tart with cream. With the rest of cream put it in a pastry bag with nozzle and fill the choux below.

Ingredients to finish the cake:
Whipped cream (200g cream 20g sugar + ride)
(Sugar to make caramel) about 100g

Plating:

Heat the sugar in a saucepan to make caramel, carefully bath the top of the choux. Place the choux on the sides of the top of the tart.
Whip the cream and when it is half whipped add the sugar and ended up whipping. Put the cream in a pastry bag with a nozzle with an opening on one side (nozzle saint honoré) and perform the blades of traditional decoration. Put a choux in the center.

Hello everyone! I hope the holidays are going well for everyone! I go home for a couple of weeks and then again to work in London but it is being a great experience, and I am preparing a guide to pastry shops in London that I hope you will love.

Today I bring you the recipe that I prepared for the Chocolate Valor Chocolate Challenge contest in which some bloggers were selected to make a chocolate dessert with their products.

Chocolate and caramel spheres with a mango and tangerine center.

Ingredients:

52g Pure Cocoa Powder 0% Added Sugars

460g Whipping cream (35% fat)

185g Sugar

10g gelatin sheets (5 sheets of 2g)

150g Milk Chocolate with Caramel Maestro Torreblanca Collection

40g honey

zest and 75g tangerine juice

60g diced waffles

9g cornstarch (cornstarch)

15g yolks

100g mango puree

90g Dark Chocolate 70% Maestro Torreblanca Collection

60g Pure Chocolate Maestro Torreblanca Collection

125g whole milk

Glaze: Soak 6g of gelatin (3 sheets of 2g) in 36g of water. Heat 25g water with 110g cream and 155g sugar in a saucepan. When it is warm we add 52g of Pure Cocoa Powder Valor and heat up to 105ºC (more or less it boils 5 minutes but better if we have a thermometer) and we add the gelatin with its water and cover with film on contact. We let it cool down.

Base: We melt 100g of Valor Caramel Milk Chocolate and mix it with 20g of honey, the zest of a tangerine and 60g of chopped wafers. We place the mixture on a tray with baking paper in rings for tartlets with a diameter of the base of the mold that we use for our mousse (in this case I used 6cm in diameter). Chill in the fridge for 20 minutes and unmold.

Filling: We mix 30g white sugar with 9g of cornstarch and add it to 15g of yolks and we mix everything to 100g of mango puree with 75g of mandarin juice. Soak 2g of gelatin sheets (1 sheet of 2g) in cold water. We heat the previous mixture in a saucepan, stirring all the time so that it does not stick with some rods until it starts to boil. We take off the heat and add the drained gelatin. Finally we add 60g of butter at room temperature and we pass the cream through the turmix (hand mixer). We distribute the mixture in molds of small spheres or in the way that we like to put in the center of the mousse (better with the help of a pastry bag). We freeze until we can unmold them.

Mounted Ganache Chocolate and Caramel: We melt 50g Milk Chocolate with Caramel Valor and in a saucepan we heat 100g cream with 20g honey, remove from heat before it boils. Add the cream little by little over the chocolate, mixing each time. Cover with film on contact and cool for about 4-6 hours. We assemble with a kitchen robot or some electric rods to have a whipped cream that we will put in a sleeve with a small starry nozzle (if we do not want to assemble it, we can reduce the amount of cream by half and use it as is).

Chocolate mousse: Soak 2g of gelatin sheets (1 sheet of 2g) in cold water. We melt 90g of Chocolate 70% Valor Collection Torreblanca and 60g Pure Chocolate Valor. In a saucepan we heat 125g whole milk and remove it before it starts to boil. Add the drained gelatin to the milk and the milk little by little, mixing well with the melted chocolate. We mount 250g of cream with soft waves (it must not be mounted at 100% so that the mixture is not cut). When the chocolate mixture is at about 40ºC we add the cream twice, mixing with enveloping movements.

Assembly: Fill with the help of a pastry bag if possible the silicone mold for the mousse a little more than half (in this case one of 6cm diameter spheres). With the help of a small spatula or a teaspoon we spread the mousse along the mold walls. Place the frozen mango cream in the center and cover it to the top with mousse. We freeze everything until we can easily unmold (2 hours at least).

We melt the glaze in a bain-marie and use it at about 35-40º. We place the frozen spheres on a rack on a tray and spread the glaze on top, covering them completely. We wait a bit and with the help of a small spatula or something similar we carefully pass them over the wafer and chocolate bases.

Finally we decorate with a spiral of the milk chocolate and caramel mounted ganache and with a little gold dust on top and some strips of confit mango. And that's it! Delicious as a dessert, eaten cold but not frozen! I hope you like it!
