El viernes 27 fue mi ultimo dÃa como profesora auxiliar de español en el colegio donde he estado trabajando durante los últimos 8 meses en Londres. Se acaba una etapa y toca volver a España y seguir con mi formación pastelera (para eso he estado todos estos meses pluriempleada). Por lo que a finales de Junio vuelvo a Madrid a por mi ultimo curso del Diploma de PastelerÃa en El Cordon Bleu!!
Bueno pues para despedir a los profesores con los que he estado trabajando los últimos meses prepare una tarta con sabores frescos y veraniegos sin renunciar al chocolate que ama todo el mundo.
Tarta de yogur, frutos rojos y chocolate
Masa sablé
Ingredientes:
1 huevo M
240g harina con una pizca de sal
80g azúcar glas
30g almendra en polvo
150g mantequilla muy frÃa
- Ponemos todos los ingredientes menos el huevo en el cuenco de la amasadora con la pala y mezclamos hasta tener como una textura de arena (la mantequilla debe estar muy frÃa).
- Añadimos el huevo y mezclamos hasta que se integre, sacamos la masa del bol y la terminamos de amasar a mano comprobando de que no quedan grumos en la masa.
- La colocamos entre papel film y la extendemos todo lo que podamos lo que nos facilitará el enfriado y luego el extendido. Enfriamos en la nevera durante 15-20 minutos.
- Sacamos la masa de la nevera, recortamos los laterales ya que hay masa de sobra y nos será más fácil extender, extendemos la masa de unos 2-3 mm de grosor. Cortamos un cuadrado algo mayor a nuestro molde.
- Enfriamos la masa otros 15 minutos para que nos sea fácil trabajar con ella. Colocamos sobre una bandeja con papel de horno o silpat el molde cuadrado, ponemos el cÃrculo de masa y le damos forma con cuidado, incidiendo en las paredes para que no queden burbujas (es interesante ponerse harina en los dedos para que no se nos pegue la masa ni la deformemos). Recortamos el exceso de masa. Pinchamos la base con un tenedor y enfriar en nevera durante 20 minutos para que no encoja la masa en el horno.
- Precalentamos el horno a 180º y colocamos papel film resistente al horno con pliegues por si encoje y rellenamos con arroz para que la tartaleta se cueza lisa y sin burbujas). Horneamos durante 10 minutos o hasta que los bordes de la masa comiencen a dorarse. Sacamos el arroz y volvemos a meter en el horno durante otros 10 minutos (horneado en blanco).
Ingredientes:
150g chocolate negro
1 huevo
150g de nata
75g de leche entera
15g de mantequilla
15g de azúcar
Elaboración:
- Calentar la leche con la nata y el azúcar. Quitar del fuego y añadirle el chocolate. Esperamos unos minutos y mezclar.
- Añadir el huevo y por último la mantequilla.
- Rellenar la tartaleta con la mezcla y hornear durante 15-20 minutos a 180º.
Ingredientes:
100g de fresa
50g frambuesa
10g agua
60g azúcar
3 unidades hojas d gelatina
3g d zumo de limón
Elaboración:
- Cortar las fresas en dados. Y ponemos la gelatina en un cuenco con agua frÃa para hidratarla.
- Y luego se ponen las fresas con el agua y el azúcar en un cazo al fuego hasta tener una pasta de fruta.
- Se retira del fuego, triturar y colar.
- Se le añade la gelatina y el zumo d limón.
- Ponemos en un molde redondo más pequeño de 14cm de diámetro (mejor de silicona para facilitar el desmoldar) y congelamos.
Ingredientes:
300g yogur natural
50g nata 35% m.g.
30g azúcar
5g de hojas de gelatina. (2 y media o 3 hojas dependiendo de lo que pesen)
150g nata 35% m.g.
Elaboración:
- Hidratar las hojas de gelatina en agua frÃa. Semimontar los 150g de nata (tiene que estar compacta pero no montada al máximo para que no se nos corte al mezclarla.) y guardarla en la nevera hasta que la vayamos a usar.
- Calentar los 50g de nata y disolver en su interior el azúcar y las hojas de gelatina escurridas.
- Verter una parte del yogurt sobre la mezcla anterior, mezclar bien e incorporarle el resto.
- Por último mezclar todo, con cuidado, con la nata montada.
- En un aro de 16cm de diámetro colocado sobre papel de guitarra o papel de horno rellenar con el mousse hasta la mitad y colocar en el centro la gelatina congelada de fresa y frambuesa. terminar de rellenar el molde con el mousse, Si nos sobra podemos rellenar otros moldes pequeños como las semiesferas que coloqué en las esquinas de la tarta.
- Con ayuda de un soplete o un secador desmoldar el mousse y lo colocar sobre la tartaleta de chocolate.
- Colocar en las esquinas las semiesferas de mousse.
- Repartir sobre el espacio sobrante de la tartaleta distintos frutos rojos (fresas, frambuesas, arándanos, etc), también podemos usar algunas de ellas para decorar arriba.

Friday 27 was my last day as teaching assistant of Spanish at the school where I have been working for the last 8 months in London. A stage is finished and it's time to turn back to Spain and continue my pastry training (for that I have been all these months working and saving). So in late June I return to Madrid for my last course of the Pastry Diploma in El Cordon Bleu!!
Well to dismiss teachers with whom I've been working the last months I prepared a cake with fresh and summery flavors without sacrificing chocolate loved by everyone.
Summer Berries Tart, chocolate&yogurt
Ingredients for shortbread dough:
1 egg M
240g flour with a pinch of salt
80g icing sugar
30g almond powder
Very cold butter 150g
Elaboration:
- Put all ingredients except the egg into the bowl of the mixer with the paddle and mix until they have a sandy texture (butter should be very cold).
- Add the egg and mix until blended, get the dough from bowl and knead by hand checking that there are no lumps in the batter.
- Film the dough and prepare two oven paper sheets so we can extend easily. Chill it in the refrigerator for 15-20 minutes.
- Take the dough from the refrigerator, cut the sides as there are plenty of it and it will be easier to extend, Extend the dough of about 2-3 mm thick. Cut a piece greater than our mould square.
- Cool the dough another 15 minutes to make it easy for us to work with. Put the square mould on a tray with baking paper or silpat , put the extended dough and give it the shape of the mould carefully, focusing on the walls so that there are no bubbles (it's interesting to put flour on your fingers so they don't deface or get stuck to the dough). Cut the excess dough. Prick the base with a fork and chill in the refrigerator for 20 minutes to not to shrink the dough in the oven.
- Preheat oven to 180 degrees and place paper resistant baked film inside the mold and fill it with rice to bake the tart smooth and with no bubbles). Bake for 15 minutes or until edges begin to be brown. Take the rice and return to put it in the oven for another 15 minutes (baked in white).
Ingredients for chocolate filling:
150g black chocolate
1 egg
150g cream
75g of whole milk
15g butter
15g sugar
Elaboration:
- Heat the milk with the cream and sugar. Remove from heat and add the chocolate. Waite a few minutes and mix.
- Add the egg and finally the butter.
- Fill the tart with the mixture and bake for 15-20 minutes at 180 degrees.
Ingredients for strawberry and raspberry jelly:
100g Strawberry
raspberry 50g
10g water
60g sugar
3 units d gelatin sheets
3g d lemon juice
Elaboration:
- Cut the strawberries into small cubes. And put the gelatin in a bowl with cold water to hydrate.
- And then add the strawberries with water and sugar in a saucepan and heat to have a fruit paste.
- Remove from heat, crush and strain.
- Add the gelatin and lemon juice.
- We put in a smaller round cake pan of 14cm diameter (best silicone to facilitate demolding) and freeze.
Ingredients for yoghurt mousse:
300g plain yogurt
35% cream 50g M.G.
30g sugar
5g gelatin sheets. (2 and half or three sheets depending on what weighing)
35% cream 150g M.G.
Elaboration:
- Hydrate the gelatin sheets in cold water. Whip 150g cream (must be compact but not whipped to the maximum so that we are not cutting the mix.) And store in the fridge until we will use.
- Heat the 50g cream and dissolve inside sugar and gelatin sheets drained.
- Pour one part of yogurt on the above mixture, mix well and incorporate the rest.
- Finally mix everything carefully with the whipped cream.
- In a 16cm diameter ring placed on paper or baking parchment guitar fill with mousse halfway and place in the center the frozen strawberry and raspberry jelly. finish filling the mold with mousse, If we have plenty we can fill other small molds as hemispheres placed at the corners of the cake.
Plating:
- Using a torch or dryer to unmold the mousse and place it on the chocolate tartlet.
- Place in the corners hemispheres mousse.
- Hand over the remaining space of the tartlet different berries (strawberries, raspberries, blueberries, etc.), we can also use to decorate some of them up of the mousse.
