Bueno se que llevo un tiempo desaparecida pero me volvieron a operar la muñeca por lo que tuve que dejar la pastelería durante unas semanas, pero toca volver poco a poco y hoy os traigo la tarta que preparé a mi prima Julia (se llama igual que yo) por su cumpleaños.

Mi prima que es francesa, y a la que no veía desde hace más de 6 años, coincidió que está viviendo en Londres, al igual que yo, además a solo dos calles de donde yo vivo, una gran (y encantadora) coincidencia. Pues el primer día que quedamos en Londres fuimos a merendar a una pastelería francesa llamada La Patisserie des Reves, donde probamos distintos pasteles, entre ellos el Saint Honoré, que según me contó era su tarta favorita de siempre.

La tarta Saint Honoré clásica está formada por una base fina de hojaldre a la que se le extiende una capa de crema Chiboust, rodeado por choux rellenos de la misma crema y bañados en caramelo. En el interior se decora con chantillí en forma de aspas elaboradas gracias a la boquilla Saint Honoré, redonda con una apertura en un lado que permite esa forma. Os dejo aquí un poco más de historia:

Saint Honoré Tart 

Masa Sablé

Ingredientes:

1 huevo M

240g harina con una pizca de sal

80g azúcar glas

30g almendra en polvo

150g mantequilla muy fría

Elaboración:

• Ponemos todos los ingredientes menos el huevo en el cuenco de la amasadora con la pala y mezclamos hasta tener como una textura de arena (la mantequilla debe estar muy fría).
• Añadimos el huevo y mezclamos hasta que se integre, sacamos la masa del bol y la terminamos de amasar a mano comprobando de que no quedan grumos en la masa.
• La colocamos entre papel film y la extendemos todo lo que podamos lo que nos facilitará el enfriado y luego el extendido. Enfriamos en la nevera durante 15-20 minutos.
• Sacamos la masa de la nevera, recortamos los laterales ya que hay masa de sobra y nos será más fácil extender, extendemos la masa de unos 2-3 mm de grosor. Cortamos un cuadrado algo mayor a nuestro molde.
• Enfriamos la masa otros 15 minutos para que nos sea fácil trabajar con ella. Colocamos sobre una bandeja con papel de horno o silpat el molde cuadrado, ponemos el círculo de masa y le damos forma con cuidado, incidiendo en las paredes para que no queden burbujas (es interesante ponerse harina en los dedos para que no se nos pegue la masa ni la deformemos). Recortamos el exceso de masa. Pinchamos la base con un tenedor y enfriar en nevera durante 20 minutos para que no encoja la masa en el horno.
• Precalentamos el horno a 180º y colocamos papel film resistente al horno con pliegues por si encoje y rellenamos con arroz para que la tartaleta se cueza lisa y sin burbujas). Horneamos durante 15 minutos o hasta que los bordes de la masa comiencen a dorarse. Sacamos el arroz y volvemos a meter en el horno durante otros 15 minutos (horneado en blanco).

Relleno crujiente de caramelo
Ingredientes:

125g azúcar
15g mantequilla
100g nata
una pizca de sal en escamas
galletas para desmigar

Elaboración:

• Poner en un cazo el azúcar y caramelizar. Calentar la nata en el microondas
• Añadir la nata en varias veces y mezclar bien. Calentar durante 4 minutos
• Pasamos la salsa a otro cuenco y esperamos a que no esté demasiado caliente (unos 35 grados) y añadimos la mantequilla y mezclamos bien. Por últimos añadimos las galletas desmigadas (unas dos para una tarta como la que yo hice).
• Rellenamos la tartaleta con nuestro caramelo crujiente y enfriamos en la nevera.

Crema chiboust
Ingredientes:

250 g leche
45 g yemas (unas 3)
50 g azúcar
25 g maizena
2 hojas de gelatina (4 g)
merengue italiano (60g claras, 120g azúcar, 40g agua)

Elaboración:

• Calentamos en un cazo la leche. En un cuenco mezclamos las yemas con el azúcar y la maizena. Ponemos a hidratar la gelatina en agua fría. 
• Antes de que la leche rompa a hervir la apartamos del fuego y la añadimos a las yemas en 3 veces mezclando bien. Ponemos todo al fuego y calentamos removiendo continuadamente para que no se pegue, hasta que espese, en ese momento lo quitamos del fuego, removemos bien con las varillas para alisar la mezcla y volvemos al fuego durante 12 segundos para eliminar el regusto de la maizena. 
• Escurrir la gelatina y añadirla a la crema caliente, mezclar para que se funda completamente.
• Merengue: calentamos en un cazo el azúcar y el agua hasta alcanzar 120ºC. Cuando esté sobre los 114ºC, comenzamos a montar las claras. Añadimos el jarabe cuando alcance los 120º poco a poco en forma de hilo sobre las claras, sin dejar de montar. Montamos hasta tener un merengue firme.
• Añadir el merengue en dos o tres veces sobre la crema pastelera aún tibia, usar directamente. Rellenamos hasta arriba la tartaleta con la crema. Con el resto de crema la colocamos en una manga pastelera con boquilla y rellenamos los choux por abajo.

Ingredientes para finalizar la tarta:
Chantillí (200g nata montar + 20g azúcar)
Azúcar para hacer caramelo ) unos 100g

Monjate:

• Calentar el azúcar en un cazo para hacer un caramelo, Con cuidado bañamos la parte superior de los choux. Colocamos los choux sobre los laterales de la tartaleta encima. 
• Montamos la nata y cuando esté medio montada le añadimos el azúcar y terminamos de montar. Colocamos la nata en una manga pastelera con una boquilla con una apertura en un lado (boquilla saint honoré) y realizamos las aspas de la decoración tradicional. Colocamos un choux en el centro.

Classic Saint Honore cake is made by a thin base puff to which extends a layer of cream Chiboust surrounded by choux filled with the same cream filling and caramel. Inside it is decorated with whipped cream shaped blades made through the nozzle Saint Honoré, round with an opening on one side that allows that shape. I leave here a little history:

Saint Honoré Tart



Ingredients for shortbread dough:
1 egg M
240g flour with a pinch of salt
80g icing sugar
30g almond powder
Very cold butter 150g

Elaboration:

• Put all ingredients except the egg into the bowl of the mixer with the paddle and mix until they have a sandy texture (butter should be very cold).
• Add the egg and mix until blended, get the dough from bowl and knead by hand checking that there are no lumps in the batter.
• Film the dough and prepare two oven paper sheets so we can extend easily. Chill it in the refrigerator for 15-20 minutes.
• Take the dough from the refrigerator, cut the sides as there are plenty of it and it will be easier to extend, Extend the dough of about 2-3 mm thick. Cut a piece greater than our mould square.
• Cool the dough another 15 minutes to make it easy for us to work with. Put the square mould on a tray with baking paper or silpat , put the extended dough and give it the shape of the mould carefully, focusing on the walls so that there are no bubbles (it's interesting to put flour on your fingers so they don't deface or get stuck to the dough). Cut the excess dough. Prick the base with a fork and chill in the refrigerator for 20 minutes to not to shrink the dough in the oven.
• Preheat oven to 180 degrees and place paper resistant baked film inside the mold and fill it with rice to bake the tart smooth and with no bubbles). Bake for 15 minutes or until edges begin to be brown. Take the rice and return to put it in the oven for another 15 minutes (baked in white).

Ingredients for craqueline (crispy on the choux) Optional:
35g butter
45g brown sugar
45g flour

Elaboration:

• Mix the three ingredients together until you have a smooth dough.
• Roll it out thinly with a rolling pin between two sheets of baking paper. Freeze.
• With a small cutter  cut circles that will be placed on the choux before baking.

Ingredients for the choux:
125g water
50g butter
2g salt
3g sugar
75g flour
2-3 eggs (depending on how much you dry the dough and the humidity it will admit more or less egg so we have to be sure that we have the right texture)

Elaboration:

• In a saucepan heat the water with butter, salt and sugar. When it starts to boil add the flour and mix well so that we have a united and smooth, dough that don't crumble.
• Put the dough to a bowl and begin to beat (better with the attachment of the blade if we have a kitchenaid or similar), a few minutes later, that it has lost the heat, add the eggs little by little just until we get a texture that falls as a tape shape.
• Put the dough in a pastry bag with a plain nozzle. Prepare a Silpat, parchment paper or nonstick pan and make high points with the dough with enough distance between them as they grow quite a lot. Place a small circle of craqueline smaller than our choux on their top.
•  Heat the oven to 200 ° C, when the oven has reached this temperature put the pan in the oven and turn it off, check the temperature inside (best without opening the door with an oven thermometer) and when it reaches 170 ° turn on the oven at 170 degrees and bake for 25-30 minutes (depending on size). To verify that it is properly baked we can open one of them and see them without raw eggs into dough. Wait for it to cool before filling.

Ingredients for crispy caramel filling:
125g sugar
15g butter
100g cream
a pinch of Maldon salt
biscuits crumble

Elaboration:

• Put sugar in a saucepan and caramelize. Heat the cream in the microwave
• Add the cream in several times and mix well. Heat for 4 minutes
• Put the sauce to another bowl and wait until is not too hot (about 35 degrees) and add the butter and mix well. By last add the crumbled biscuits (about two for a cake as I did).
• Fill the tart with our crunchy caramel and chilled in the refrigerator.

Ingredients for Chiboust cream:
250 g milk
45 g yolks (about 3)
50g sugar
25g cornflour
2 sheets of gelatin (4 g)
Italian meringue (60g egg whites, 120g sugar, 40g water)

Elaboration:

• Heat the milk in a saucepan. In a bowl mix the yolks with the sugar and cornstarch. Hydrate the gelatin in cold water.
• Before the milk begins to boil take away from the fire and add to the yolks mixing well in 3 times. We put all at the heat again and  heat stirring continuously to prevent sticking, until it thickens, then take it away from heat, stir well with a whisk to smooth the mixture and return it to heat for 12 seconds to remove the taste of cornstarch.
• Drain the gelatin and add to the hot cream, stir to completely mix..
• Meringue: warm in a saucepan the sugar and water to 120 ° C. When it reaches about 114°C, begin to whip the egg whites. Add the syrup when it reaches 120 degrees, gradually. Whip to have a firm meringue.
• Add the meringue in two or three times on the still warm custard, use directly. Fill up above the tart with cream. With the rest of cream put it in a pastry bag with nozzle and fill the choux below.

Ingredients to finish the cake:
Whipped cream (200g cream 20g sugar + ride)
(Sugar to make caramel) about 100g

Plating:

• Heat the sugar in a saucepan to make caramel, carefully bath the top of the choux. Place the choux on the sides of the top of the tart.
• Whip the cream and when it is half whipped add the sugar and ended up whipping. Put the cream in a pastry bag with a nozzle with an opening on one side (nozzle saint honoré) and perform the blades of traditional decoration. Put a choux in the center.
