Decoración: frambuesas (o fresas o moras, etc.) y chocolate blanco

English version
Another sweet challenge, this seems very beautiful and special one, and I was trying to develop a pastry (or recipe, decoration, etc.) that could be part of a tale themed party chosen for this month. And the story of this month's The Sleeping Beauty, one of the Disney films I've seen a lot.
So my pastry is inspired by one of my favorite scenes from the film, when Aurora goes to pick berries in the forest for the fairies to prepare for her birthday party and she is in the woods with the prince. So my tartlets are inspired by the Aurora carrying basket and has its red fruits and the love by Prince by the passion fruit flavour.
You could change the recipe ingredients to more common and recognizable to the palate of children ingredients such as using strawberries instead of raspberries (or any other red fruit) and change the passion fruit juice for lemon or orange.
Raspberry and passion fruit tarts
(Ingredients for about 30)
Shortbread dough:
1 egg M
240g flour with a pinch of salt
80g icing sugar
30g almond powder
Very cold butter 150g
Preparation:
- Put all ingredients except the egg into the bowl of the mixer with the paddle and mix until you have a sandy texture (butter should be very cold).
- Add the egg and mix until blended, get the dough from bowl and knead by hand checking that there are no lumps in the batter.
- Place the batter between cling film and extend a bit so it facilitates it to cool down and then get extended. Chill it in the refrigerator for 15-20 minutes.
- Take the dough from the refrigerator, cut the sides as there are plenty of mass and it will be easier to extend, roll the mass of about 2-3 mm thick. Cool the mass further 15 minutes to make it easy for us to work with.
- Cut thick strips of the height of the rings we will use (mine were one 2cm high) and cut circles of the inside size of the ring (my rings were 6cm diameter). Cut the excess dough. Prick the base with a fork and chill in refrigerator for 20 minutes to not shrink the dough in the oven.
- Preheat oven to 180 degrees. Put inside the tarts some baking paper or heat resistant cling film and fill with rice. Bake for 15 minutes or until edges begin to be brown. Take the rice out and return to the oven for another 7 minutes (baked in white).
Passion fruit:
3 egg
350ml passion fruit puree
100g sugar
5 g gelatin sheets
30g butter
Elaboration:
- Mix the eggs with the fruit puree and sugar. Leave the gelatine sheets in cold water.
- Heat the mixture in a saucepan and stir constantly to prevent sticking, until it begins to thicken. Then take it out of the fire and add the gelatin.
- When the mixture has cooled to about 28-30 ° C add the softened butter. Mix well with a blender
- Fill our tarts and let them cool down in the refrigerator.
Decoration: raspberries (or strawberries or blackberries, etc.) and white chocolate
- Melt the chocolate (and if you know the technique to temper chocolate better) and extend the chocolate between two sheets of guitar (or baking paper) when it begins to stiffen cut circles the size of the tartlet and one inside a bit smaller to represent the handles baskets.
