• 150g oreo cookies
• 50g melted butter
• 60ml cream
• 90g black chocolate

• 200 g white chocolate
• 200 ml cream (+ 50 more to mix with gelatin)
• 5 g of gelatin sheets

• Prepare a ring or silicon mold (if we can ride it with acetate will be easier then unmould it, otherwise have to spend a knife around the sides or heat the ring with a torch a little). We chop very fine oreo cookies and add them to the melted butter.
• In a saucepan put the cream to boil, remove the pan from the heat and add the melted chocolate. Stir and let it cool slightly. Add the mixture to the base of oreo. Put the mixture through the mold base and sides.

• Hydrate the gelatin in cold water, Melt white chocolate in a saucepan and heat cream 50g.
• Add the gelatin to the hot cream, stir gradually adding the cream to white chocolate.
• The rest of the cream and add cold ride white chocolate (must be still warm, about 34 ° C to solidify the gelatin and let no lumps). Fill the mold with oreo base and let stand in refrigerator at least 3 hours (best overnight). Unmold and garnish to taste with for example raspberries, white chocolate, minioreos ...

• Ponemos todos los ingredientes menos el huevo en el cuenco de la amasadora con la pala y mezclamos hasta tener como una textura de arena (la mantequilla debe estar muy fría).
• Añadimos el huevo y mezclamos hasta que se integre, sacamos la masa del bol y la terminamos de amasar a mano comprobando de que no quedan grumos en la masa.
• La colocamos entre papel film y la extendemos todo lo que podamos lo que nos facilitará el enfriado y luego el extendido. Enfriamos en la nevera durante 15-20 minutos.
• Sacamos la masa de la nevera, recortamos los laterales ya que hay masa de sobra y nos será más fácil extender, extendemos la masa de unos 2-3 mm de grosor. Cortamos un cuadrado algo mayor a nuestro molde.
• Enfriamos la masa otros 15 minutos para que nos sea fácil trabajar con ella. Colocamos sobre una bandeja con papel de horno o silpat el molde cuadrado, ponemos el círculo de masa y le damos forma con cuidado, incidiendo en las paredes para que no queden burbujas (es interesante ponerse harina en los dedos para que no se nos pegue la masa ni la deformemos). Recortamos el exceso de masa. Pinchamos la base con un tenedor y enfriar en nevera durante 20 minutos para que no encoja la masa en el horno.
• Precalentamos el horno a 180º y colocamos papel film resistente al horno con pliegues por si encoje y rellenamos con arroz para que la tartaleta se cueza lisa y sin burbujas). Horneamos durante 10 minutos o hasta que los bordes de la masa comiencen a dorarse. Sacamos el arroz y volvemos a meter en el horno durante otros 10 minutos (horneado en blanco).

• Calentar la leche con la nata y el azúcar. Quitar del fuego y añadirle el chocolate. Esperamos unos minutos y mezclar.
• Añadir el huevo y por último la mantequilla.
• Rellenar la tartaleta con la mezcla y hornear durante 15-20 minutos a 180º.

• Cortar las fresas en dados. Y ponemos la gelatina en un cuenco con agua fría para hidratarla.
• Y luego se ponen las fresas con el agua y el azúcar en un cazo al fuego hasta tener una pasta de fruta.
• Se retira del fuego, triturar y colar.
• Se le añade la gelatina y el zumo d limón.
• Ponemos en un molde redondo más pequeño de 14cm de diámetro (mejor de silicona para facilitar el desmoldar) y congelamos.

• Hidratar las hojas de gelatina en agua fría. Semimontar los 150g de nata (tiene que estar compacta pero no montada al máximo para que no se nos corte al mezclarla.) y guardarla en la nevera hasta que la vayamos a usar.
• Calentar los 50g de nata y disolver en su interior el azúcar y las hojas de gelatina escurridas.
• Verter una parte del yogurt sobre la mezcla anterior, mezclar bien e incorporarle el resto. 
• Por último mezclar todo, con cuidado, con la nata montada.
• En un aro de 16cm de diámetro colocado sobre papel de guitarra o papel de horno  rellenar con el mousse hasta la mitad y colocar en el centro la gelatina congelada de fresa y frambuesa. terminar de rellenar el molde con el mousse, Si nos sobra podemos rellenar otros moldes pequeños como las semiesferas que coloqué en las esquinas de la tarta.

• Con ayuda de un soplete o un secador desmoldar el mousse y lo colocar sobre la tartaleta de chocolate.
• Colocar en las esquinas las semiesferas de mousse.
• Repartir sobre el espacio sobrante de la tartaleta distintos frutos rojos (fresas, frambuesas, arándanos, etc), también podemos usar algunas de ellas para decorar arriba.

• Put all ingredients except the egg into the bowl of the mixer with the paddle and mix until they have a sandy texture (butter should be very cold).

• Film the dough and prepare two oven paper sheets so we can extend easily. Chill it in the refrigerator for 15-20 minutes.
• Take the dough from the refrigerator, cut the sides as there are plenty of it and it will be easier to extend, Extend the dough of about 2-3 mm thick. Cut a piece greater than our mould square.
• Cool the dough another 15 minutes to make it easy for us to work with. Put the square mould on a tray with baking paper or silpat , put the extended dough and give it the shape of the mould carefully, focusing on the walls so that there are no bubbles (it's interesting to put flour on your fingers so they don't deface or get stuck to the dough). Cut the excess dough. Prick the base with a fork and chill in the refrigerator for 20 minutes to not to shrink the dough in the oven.
• Preheat oven to 180 degrees and place paper resistant baked film inside the mold and fill it with rice to bake the tart smooth and with no bubbles). Bake for 15 minutes or until edges begin to be brown. Take the rice and return to put it in the oven for another 15 minutes (baked in white).

• Heat the milk with the cream and sugar. Remove from heat and add the chocolate. Waite a few minutes and mix.
• Add the egg and finally the butter.
• Fill the tart with the mixture and bake for 15-20 minutes at 180 degrees.

• Cut the strawberries into small cubes. And put the gelatin in a bowl with cold water to hydrate.
• And then add the strawberries with water and sugar in a saucepan and heat to have a fruit paste.
• Remove from heat, crush and strain.
• Add the gelatin and lemon juice.
• We put in a smaller round cake pan of 14cm diameter (best silicone to facilitate demolding) and freeze.

• Hydrate the gelatin sheets in cold water. Whip 150g cream (must be compact but not whipped to the maximum so that we are not cutting the mix.) And store in the fridge until we will use.
• Heat the 50g cream and dissolve inside sugar and gelatin sheets drained.
• Pour one part of yogurt on the above mixture, mix well and incorporate the rest.
• Finally mix everything carefully with the whipped cream.
• In a 16cm diameter ring placed on paper or baking parchment guitar fill with mousse halfway and place in the center the frozen strawberry and raspberry jelly. finish filling the mold with mousse, If we have plenty we can fill other small molds as hemispheres placed at the corners of the cake.

• Using a torch or dryer to unmold the mousse and place it on the chocolate tartlet.
• Place in the corners hemispheres mousse.
• Hand over the remaining space of the tartlet different berries (strawberries, raspberries, blueberries, etc.), we can also use to decorate some of them up of the mousse.

• Untar el molde con bastante mantequilla y enfriar en la nevera.
• Montar las yemas y la claras juntas hasta que tripliquen su volumen y la mezcla sea muy aérea y blanquecina.
• Añadir la maizena con cuidado de que no queden grumos y con cuidado de no bajar el montado con ayuda de una espátula de goma (podemos extraer una pequeña cantidad del montado y mezclarlo bien con la maizena para deshacer cualquier grumo que pueda surgir y luego añadir esta mezcla al resto de yemas montadas).
• Verter la masa en el molde y colocar al baño maría con el agua hirviendo flojo durante 8-10 minutos teniendo cuidado de que el agua no salpique dentro del bizcocho  (yo no tenía ninguna olla donde cupiera el molde por lo que coloqué una bandeja con agua en el horno a 200º y cuando el agua estaba hirviendo metí el molde y bajé la temperatura del horno a 160º con solo calor abajo).
• Pasado este tiempo sacar el molde del baño y pasarlo al horno precalentado a 140º y cocer durante 20-25 minutos o hasta que al pincharlo salga limpio (yo como ya lo tenía en el horno, le quité la bandeja con agua y puse calor arriba y abajo a 140º durante 15 minutos).

• Mientras tenemos el bizcocho en el horno calentar el agua con el azúcar y la piel de limón y hervir durante 7 minutos.
• Cuando el bizcocho salga del horno lo pincharlo con un palillo varias veces pero sin llegar hasta el final.
• Bañar el bizcocho con el almíbar. Esperar 5 minutos. Desmoldar el bizcocho con cuidado de que no se rompa.

• Hervir el agua con el azúcar durante 10 minutos.
• Mezclar las yemas con la cucharada de agua. Añadir el jarabe poco a poco sobre las yemas. 
• Calentar todo a fuego lento sin dejar de remover con unas varillas para que no se pegue, hervimos 3 minutos. Dejar que se temple un poco antes de usar pero no demasiado para que quede más lisa.
• Extendemos la crema de yema por encima del bizcocho cubriéndolo completamente.
• Para finalizar extendemos una capa de azúcar glas por encima con ayuda de un colador o tamiz y con una varilla previamente calentada al fuego marcamos el dibujo de los rombos encima (yo usé una varilla de las que se suele usar para los pinchos morunos de metal y la calenté en los fuegos de la cocina). Podemos además decorar con claras montadas con azúcar (a mi me gusta mas así sin nada más ya que es un pastel bastante dulce).

• Spread the mold with enough butter and cool it in the refrigerator.

• Add the cornstarch carefully so there are no lumps and careful not to lose the air using a rubber spatula (we can extract a small amount of whipped yolks and mix well with the cornflour to break up any lumps that may arise and then add this mix the rest of the whipped egg yolks).
• Pour the batter into the pan and place the bain-marie with boiling water for 8-10 minutes taking care that the water does not splash into the cake (I had no pot which could fit the mold so I put a tray with water in the oven at 200 degrees and when the water was boiling I put the mold and lowered the oven temperature to 160 degrees with only heat below).
• After this time, remove the mold from the bain-marie and put the cake in the preheated oven at 140 degrees and bake for 20-25 minutes or until it comes out clean when we puncture it (as I had it in the oven, I removed the tray with water and put heat up and down to 140 degrees for 15 minutes).

• While we have the cake in the oven heat water with sugar and lemon peel and boil for 7 minutes.
• When the cake is out of the oven pierce with a stick several times but without reaching the end.
• Dip the sponge cake with the syrup. Wait 5 minutes. Carefully unmold the cake to not break it.

• Boil water with sugar for 10 minutes.
• Mix the egg yolks with a tablespoon of water. Add the syrup slowly over the yolks.
• Heat over low heat, stirring with a whisk to prevent sticking, boil for 3 minutes. Allow to temper a bit before using but not too much to make it smoother.
• Extend yolk cream over the cake completely covering it.
• Finally we extend a layer of icing sugar over using a strainer or sieve and a rod preheated fire we mark the drawing of the diamonds above (I used a rod which is typically used for kebabs metal the fires warmed in the kitchen). We can also decorate with egg whites with sugar (I like more and nothing more because it's a pretty sweet cake).
